Duck Waffles

Ingredients:
Smoked Duck Breast
- 1 King Cole smoked duck breast
Brown Butter Waffles
- 2 cups all purpose flour
- 1 tbsp white sugar
- 4 tsp baking powder
- ¼ tsp salt
- 2 eggs
- ½ cup brown butter
- 1 ¾ cups milk
- 1 tsp vanilla extract
- 1 tsp allspice
- ½ tsp ground nutmeg cooking spray
Mustard Seeds
- ½ cup yellow mustard seeds
- ½ cup water
- ¼ cup white vinegar
- 2 tbsp sugar
Cherries
- 2 cups frozen cherries
- ½ cup white sugar
Directions:
For the Pickled Mustard Seed:
- Place everything into a pot and boil until the seeds are tender and most of the liquid has been cooked out. They should be sticky but still spoonable.
For the Cherries:
- Take your stewed cherries, cook everything down until the cherries are tender and have created a syrup.
For the Waffles:
- Preheat your waffle iron, and spray with cooking spray or oil.
- Whisk together the dry ingredients. Add your wet ingredients. When adding the brown butter, this should not be extremely hot, but slightly room temperature.
- Let the batter sit for 10 minutes, allowing all air bubbles to relax.
- Pour the mixture onto a hot waffle iron and cook until golden brown.
For the Smoked Duck Breast:
- Slice your King Cole smoked duck breast.
For Serving:
- Plate your waffles and garnish with smoked duck breast.
- Pour on some delicious maple syrup and garnish with mustard seeds and cherries.
