Duck Latkes

  • 1 large sweet potato, peeled
  • 1 medium sized white onion
  • 1 package King Cole Pulled Duck, comes cooked
  • 1 egg
  • 1/3 cup all purpose flour
  • 1/4 cup fresh thyme plus extra to sprinkle on top, chopped
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1/2 cup canola oil, for frying

Cranberry Sauce

  • 200 grams fresh cranberries
  • 1/4 cup white sugar
  • 2 tsp water

Directions:

For the Latkes with Pulled Duck:

  1. Grate your sweet potato and white onion
  2. Squeeze the potatoes and onions in a dish towel or cheese cloth. Squeeze really hard! You want to remove as much liquid as you can. This is very important for crispy latkes.
  3. Mix in your pulled King Cole Duck, fresh thyme, pepper, salt, egg and flour.
  4. Place a pan on medium heat and add in oil. You want enough oil to shallow fry your latkes.
  5. Spoon your mixture into the oil and fry until golden brown. Then flip.

For the Cranberry Sauce: Add all ingredients to a pot and let simmer until the cranberry sauce becomes thick and jam like.

Serving: Serve your latkes with any additional garnish you like! Cinnamon applesauce would be great, as well as some sour cream! Sprinkle it with salt and fresh thyme. Happy Hannuka!
