How To Prepare:
If buying duck from Frozen, for best results allow the duck to thaw 48 hours in your refrigerator.
- Remove giblets, wash & drain duck. Pat dry.
- Sprinkle duck cavity with sea salt, quarter an onion, coarsely chop celery and add both to the cavity.
- Season exterior of duck with salt & pepper to taste
- Pre-heat oven to 325˚F, place duck on rack in roasting pan and cooked uncovered for 2 ½ to 3 hours. No basting is required.
- Duck is ready when golden brown and legs can be moved freely. Quarter the duck (do not carve).

How To Prepare:
- Carefully score skin only in a criss-cross pattern.
- Place breast skin-side down in a cool, non-stick pan. Gradually turn up heat to Med-High.
- After 9-10 minutes, skin should be crisp, golden brown.
- Remove most of rendered fat from pan, flip breast over and sear for 2 minutes.
- Place breast in oven-proof pan in pre-heated 325F oven for 7-10 minutes (internal temp. 130-135F).
- Remove from oven, allow to rest for 3-5 minutes. Slice. Serve.

Peppered Duck Breast

Sold frozen. For best results, thaw 24 hours before preparing. To serve hot:
- Carefully score the skin (only) in a criss-cross pattern.
- Place skin-side down in a cool skillet or pan.
- Turn heat on to Med-High for approx. 10-minutes or until skin crisps to your liking.
- Let breast stand for 1- 2 minutes, then slice diagonally and serve.

How To Prepare:
These gourmet wings are fully cooked and must be thawed before preparation:
- Bring pot of water to boil. Remove pot from heat and place package of frozen wings into water for approx. 7 minutes or completely thawed through.
- Open the package and place wings on pre-heated BBQ grill at Med-High for approximately 5 minutes.
- Season wings with salt and pepper.
- Brush each wing with your favourite BBQ sauce (ours is Applewood & Smoked Hickory).
- Wings are done once heated through; skin on edges begins to crisp.

How To Prepare:
- Cook from Frozen.
- Remove rolls from package and place on pan.
- Preheat oven to 400F and bake rolls for 10-12 minutes or golden brown.
- Rolls will be very warm, please be cautious serving to guests.

- Bring pot of water to boil then remove pot from heat.
- Remove duck from box and place package in boiled water for 15 minutes.
- Remove duck from plastic, place on oven-proof tray and place under broiler for 10 minutes or to your preference of crisp skin.
- Serve immediately.

Our duck skewers of breast meat have a ribbon of fat that melts through the meat in the grilling process, creating a juicy and tender sensation. These are a fan favourite for Summer BBQ appetizers!

- Remove skewers from package and pat dry.
- Season with sea salt and pepper.
- Lightly coat skewers with oil to avoid sticking to grill.
- Place skewers on Med-heat grill, turning every 60 seconds to achieve an overall cooked skewer.
- Chef’s Tip: Brush on your fave sauce for added taste. Ours is Pesto.

Smoked Duck Breast
We take our premium grade boneless breasts and cook them using Canadian rock maple for the just the right hint of smoky flavour. This is our most versatile and widely used product around the world: from restaurants and cruise ships to home kitchens like yours.

Fully Cooked Confit Duck Legs
Another fine example from King Cole Kitchens cook plant, is our duck leg is cooked in the traditional French method of cooking. In just under 10 minutes in the oven, the result is a rich-tasting duck leg with wonderful texture and tenderness.

How To Prepare:
If you purchased this product Frozen, allow 24 hours to thaw before following these steps:
- Bring a pot to boil. Remove pot from heat source.
- Open the box of confit legs and place the unopened packaged legs in the boiled water for 15 minutes. As this product is fully cooked, the hot water warms the meat and allows the rich juices from the sous vide process to bend beautifully in the next step.
- Remove legs from the package, place on an oven-proof tray and place under the Broiler, second rack from the top. Broil for approximately 10 minutes or to your preference for crisp skin. Individual oven temperatures vary. These are general preparation guidelines only.

Duck Legs
Once you taste the rich, flavourful meat of a duck leg you will appreciate why they are in such high demand in North America. The slow, steady cooking process is the key to result in fall-off-the-bone meat.

How To Prepare:
- Remove from package and season duck leg with salt & pepper.
- Heat pan to Med-High and place leg skin-side down and sear for 9-10 minutes or until brown.
- Turn leg over and cook for another 2 minutes.
- Place leg in baking pan with herbs and roast in 400F oven for 30 minutes.
- Reduce heat to 350F and bake for another 30 minutes or until tender (internal temp. of 165F).
- Chefs Tips: we recommend a pan filled with 5-6 Rosemary sprigs, 1 chopped onion, 2 peeled garlic cloves and 3 cups Chicken broth.

- Grill or fry for 15 minutes or until cooked throughout, turning often.
